How to Make
Make the Cake:
Step One: Prepare your 8″ and 6″ pans with butter and flour.
Step Two: In a bowl, cream together the sugar and butter until light and fluffy. Add the eggs, one at a time, then stir in the vanilla.
Step Three: In a separate bowl, combine flour and baking powder. Add to the creamed mixture and mix well.
Step Four: Slowly stir in milk until batter is smooth. Careful not to over-mix!
Step Five: Bake for 30-40 minutes, or until an inserted toothpick comes out clean.
Make it Bright: Before baking, add some color to your batter with 3-6 drops of teal food coloring, or until desired color is achieved.
Make the Buttercream:
Step One: Using an electric mixer or stand mixer, combine shortening and room temperature butter until light and fluffy.
Step Two: Add powdered sugar in intervals, mixing slowly at first to avoid spilling. Mix on medium-high speed for 4-6 minutes.
Step Three: Stir in vanilla extract.
Icing your cake: Set aside 3 cups of buttercream to ice your cakes and use the remaining buttercream to frost the inner layers. Stack and finish your cake with fun wintry details, including an Everest figurine!
